How to make Chicken Biryani
- 1 kg chicken pieces (medium size)
- 1 kg basmati rice
- 5 or 6 cardamom cloves
- 4 or 5 clove
- 2 or 3 small cinnamon sticks
- 500 gm sliced onions
- 400 gm diced Tomatoes
- 150 ml oil
- 50 gm ghee
- 100 gm ginger paste
- 50 gm garlic paste
- 3 green chillies
- 8 gm chilli powder
- 1tsp turmeric powder
- Handful of mint leaves
- Handful of coriander leaves
- 100 ml curd
- 35gm Salt
- Cumin (jeera) 1tsp
- 1 lemon extract
Method:
Wash and rinse the rice well and soak 20 min keep aside.
Heat oil in a pan. Add ghee and add cinnamon stick, cloves, cardamom spices. Then add sliced onions and stir well. Keep medium flame. When Onion turns brown add ginger garlic paste. Stir one minute then add chilli powder and green chillies saute well. Add curd, turmeric and salt, mix well. Then add tomatoes. Saute tomatoes and leave them. After 2 min add mint and coriander leaves mix well them. Add lemon extract. Then add chicken pieces, mix well. Leave 5min in low flame and saute occasionally. Then add 1 litre hot water. Bring to a boil. Meanwhile take another pan add 3 litres water bring to a boil and add 2 spoon salt. Put Jeera, half lemon juice and some mint in it. Then add previously soaked basmati rice. Stir it, leave 2 min and drain the water. Then add rice into a chicken masala pan. Mix well. Keep high flame for 5 min and stir well. Close the lid and then keep slow flame on 4 min. Switch off the stove. Leave 5 min. Slightly mix Now very tasty and flavorful perfect biriyani is ready. Serve hot with raita.
