Perfect Chicken Biryani 1 kg

How to make Chicken Biryani 





Ingredients:

  • 1 kg chicken pieces (medium size)
  • 1 kg basmati rice
  • 5 or 6 cardamom cloves
  •  4 or 5 clove
  • 2 or 3 small cinnamon sticks
  • 500 gm sliced onions
  • 400 gm diced Tomatoes
  • 150 ml oil
  • 50 gm ghee
  • 100 gm ginger paste
  • 50 gm garlic paste
  • 3 green chillies 
  • 8 gm chilli powder
  • 1tsp turmeric powder
  • Handful of mint leaves
  • Handful of coriander leaves
  • 100 ml curd
  • 35gm Salt
  • Cumin (jeera) 1tsp
  • 1 lemon extract


   Method:

   Wash and rinse the rice well and soak 20 min keep aside. 

          Heat oil in a pan. Add ghee and add cinnamon stick, cloves, cardamom spices. Then add sliced onions and stir well. Keep medium flame. When Onion turns brown add ginger garlic paste. Stir one minute then add chilli powder and green chillies saute well. Add curd, turmeric and salt, mix well. Then add tomatoes. Saute tomatoes and leave them. After 2 min add mint and coriander leaves mix well them. Add lemon extract. Then add chicken pieces, mix well. Leave 5min in low flame and saute occasionally. Then add 1 litre hot water. Bring to a boil. Meanwhile take another pan add 3 litres water bring to a boil and add 2 spoon salt. Put Jeera, half lemon juice and some mint in it. Then add previously soaked basmati rice. Stir it, leave 2 min and drain the water. Then add rice into a chicken masala pan. Mix well. Keep high flame for 5 min and stir well. Close the lid and then keep slow flame on 4 min. Switch off the stove. Leave 5 min. Slightly mix Now very tasty and flavorful perfect biriyani is ready. Serve hot with raita.

Seasame seed chutney (thovayal)

  Ellu thovayal Ellu thovayal (sesame chutney) is a traditional south Indian recipe. It is very spicy and sour recipe. It is also easy to make. This is a very old popular side dish recipe for rice. It is made with sesame seeds. These seeds are very healthy for our body. Its have calcium, protein, iron etc.  Ingredients: Oil 2 tsp 1/2 cup black sesame seed or white seed 5 Dry red chilli 6 garlic  Tamarind (1 gooseberry size)  Coconut pieces 2 or 3 Preparation: Heat oil in a pan. Add sesame seeds, dry chilli, saute for 1 minute. Then add garlic, Tamarind and coconut pieces. fry them till it turns slightly brown. Then turn off the flame and leave it cool. After getting cool transfer them into a mixie jar. Grind with the required amount of water and salt. It should be a thick and smooth paste. Then transfer into a bowl. Now thovaiyal is ready. serve with tamarind rice or lemon rice. This combination will be amazing.

Chicken curry village style

South indian Chicken curry  Ingredients: 1/2 kg chicken pieces 125 ml oil Cinnamon one small stick 2 cardamom 2 cloves  Shallot 200 grams  Onion 1 medium size 5 tomatoes 3 tbsp Ginger and garlic paste 2 tbsp cumin powder 1 tsp pepper powder 1 tbsp chilli powder 1 tsp fennel powder 2 green chilli 1 tsp turmeric powder 1 tsp garam masala 2 tbsp Curd  2 tbsp coriander powder 1/4 cup coconut pieces Cashew 25 g  1 tbsp chopped Coriander leaves 2 or 3 potatoes ( cut into 4 pieces) Method:               Take coconut, roasted gram and cashew nut. Put them into mixie jar. Grind them as a smooth paste. Keep aside.                Then Heat oil in a pan. Add cinnamon sticks, cardamoms, and cloves. Fry for 10 seconds.
